Fast Diet Tomato and Parsley Chicken

A very healthy and tasty chicken recipe that you’ll not only love to eat

but will help your fast diet progress…

Have a go…

What you’ll need:

8  chicken thighs or 4 chicken legs without skin

1 15oz tin of tomatoes or fresh tomatoes

pinches of salt and black pepper to taste

1 clove of garlic chopped or minced

2 tablespoons olive oil

approx 4oz parsley (chopped)

What you do…

Rub the chicken pieces with the salt and pepper

In a large frying pan/saucepan heat the olive oil and brown the chicken for between 3-5 minutes each side

Take the chicken from the pan

Put tomatoes, garlic & parsley into pan and cook for approx 3 minutes

Add chicken pieces back into pan and simmer in tomato sauce until cooked (approx 7-8 minutes)

(In this recipe mushrooms can substitute parsley)

Serve with vegetables/new potatoes or salad/jacket potato

Serves 4 people
